Ingredients for 1 servings:

  • 75 g butter
  • 125 g oat flakes
  • 75 g sugar
  • 1 egg(s)
  • 1 lemon(s), untreated, 1 tsp zest
  • 50 g flour
  • 1 tsp, leveled baking powder
  • some powdered sugar for dusting
  • Grease for the tray

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the butter in a pan. Lightly toast the oats and 1 tablespoon of sugar. Remove from the heat and let cool. Whisk the remaining sugar, egg, and lemon zest until fluffy. Combine the flour and baking powder and sift them over the oats, then stir into the beaten egg until well blended. Using two teaspoons, place walnut-sized heaping spoons onto a greased baking sheet. Bake in a preheated oven at 180°C for 12 to 15 minutes. Let cool on a wire rack, then dust with powdered sugar.
