Carpaccio of turnips

Ingredients for 2 servings:

  • 1 turnip, approx. 8-10 cm diameter
  • 8 slices of ham (San Daniele)
  • 4 mushrooms
  • some arugula
  • 1 cocktail tomato
  • 2 tbsp Balsamic vinegar, white
  • 4 tbsp olive oil
  • 2 tsp sugar
  • Salt
  • Black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Peel the turnips and cut them into wafer-thin slices (e.g., using a bread slicer). Mix the balsamic vinegar, oil, salt, sugar, and pepper and drizzle over the turnip slices. Marinate in the refrigerator for about 1 hour. Place about 12-15 slices on each plate, garnish with ham, arugula, mushrooms, and tomatoes. Drizzle with some of the turnip sauce and season with black pepper.
