Asparagus salad with shepherd's cheese

Ingredients for 4 servings:

  • 600 g asparagus, green
  • 4 tbsp lemon juice
  • 2 tbsp water
  • 1 bunch of chives, cut into rolls
  • 0.33 tsp salt
  • 1 tsp honey, milder, e.g. acacia honey, blossom honey
  • 5 tbsp olive oil
  • 1 tsp pepper, green, pickled, coarsely chopped
  • 4 slice(s) ham, air-dried, thin slices
  • 1 pkt. Shepherd’s cheese, creamy, natural, approx. 175 g

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

Wash the asparagus and trim the ends. Use a vegetable peeler to slice it into long, thin slices. Combine lemon juice with water, chives, salt, and honey. Stir in 2 tablespoons of olive oil and marinate the asparagus slices. Sprinkle with green pepper. Drain the cheese and dice it. Fry the ham slices in the remaining hot oil until crispy, then drain on kitchen paper. Divide the asparagus salad among plates and serve with crispy ham slices and cheese.
