Egg mince with sorrel and ham

Ingredients for 6 servings:

  • 6 eggs, hard boiled
  • 150 g diced ham
  • 100 g mayonnaise
  • 1 handful of sorrel, young leaves
  • 1 herbal salt (wild garlic salt)
  • 1 black pepper
  • 1 onion(s), red or white
  • 1 gherkin(s), if desired

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the eggs and dice them into small pieces. Wash the sorrel, pat it dry, and cut it into thin strips. Peel the onion and finely dice it. Mix all ingredients together and season with salt and pepper. Variation: Dice a small pickled gherkin and stir it into the spread. Serve with hearty farmhouse bread.
