Tarragon – Matjes

Ingredients for 4 servings:

  • 800 g fish fillet(s) (matjes fillets)
  • 500 g crème fraîche
  • 500 g quark (low-fat quark)
  • 3 eggs, hard-boiled
  • 1 tsp honey
  • 1 tbsp mustard (Dijon or Löwensenf)
  • 5 tbsp tarragon, chopped
  • 2 tbsp chives, chopped
  • 1 tbsp sorrel, chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 30 minutes

Chop the herbs not too finely with a knife. Mix the dairy products with the honey and mustard. Chop the eggs very finely, as well as the shallots. Mix everything together. Rinse the herring fillets, pat dry, and cut into very small pieces. Fold in. Let everything sit for a few hours. It tastes great with baked potatoes or boiled potatoes as a main course, but also makes a very delicious small appetizer, as the flavor is surprisingly mild.
