Ingredients for 6 servings:

  • 6 fish fillets (matjes fillets)
  • 3 tomatoes
  • 4 gherkins
  • 2 spring onions
  • 1 bunch of dill
  • salt and pepper
  • Balsamic vinegar
  • Sugar
  • oil

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Soak the herring fillets for 1-2 hours, if necessary. Taste for salt content! Cut the fillets into pieces, remove the seeds from the tomatoes, and dice them. Also dice the gherkin. Trim the spring onions and finely slice them. Finely chop the dill. Mix the balsamic vinegar, salt, a pinch of sugar, pepper, and oil into a sauce. Add all ingredients and mix well. Refrigerate for about 1 hour. Serve with boiled or fried potatoes. A very refreshing dish in summer.
