Walnut brownies with quark

Ingredients for 1 servings:

  • 200 g chocolate
  • 80 g butter
  • 80 g sugar
  • 1 tsp vanilla sugar
  • 2 eggs
  • 100 g flour
  • 1 tsp, leveled baking soda
  • ½ tsp salt
  • Fat for the mold
  • 250 g quark, 40% fat
  • 1 tbsp lemon juice
  • 1 pinch of salt
  • 2 tbsp cornstarch
  • 40 g sugar
  • 1 tsp vanilla sugar
  • 1 egg(s)
  • 150 g walnuts, chopped
  • 2 tsp raw cane sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

for a 26cm springform pan

Melt the butter in a pan over low heat, turn off the heat, and melt the grated chocolate. Stir in the sugar and vanilla sugar. Let cool slightly. Preheat the oven to 160°C (320°F). Grease a 26cm springform pan. Pour the chocolate mixture into a bowl and stir in the eggs. Mix the flour with salt and baking soda and fold it into the pan. Pour onto the pan and smooth it down. Mix the quark with the egg, sugar, vanilla sugar, lemon juice, and salt, then stir in the cornstarch. Spread the mixture over the batter. Sprinkle the walnuts over the top and sprinkle them with the brown sugar. Bake in the preheated oven on the middle rack for about 30 minutes. Once cooled, cut into pieces. Note: I baked my recipe using a 26cm springform pan. If you prefer the brownies thicker, just use a smaller square pan.
