Sandra's Quark Pockets with Streusels

Ingredients for 4 servings:

  • 200 g quark
  • 1 egg yolk
  • 20 g vanilla pudding powder
  • 1 tsp lemon zest
  • 40 g butter or margarine, melted
  • 1 tbsp, heaped sugar
  • 5 tbsp powdered sugar, approx.
  • some milk and/or lemon juice
  • 200 g flour
  • 150 g margarine
  • 75 g sugar
  • a little cinnamon
  • 1 roll (to taste dough, approx. 275 g each
  • 1 egg white

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

quick pastry, easy to make, few ingredients

Mix the filling ingredients well. Cut the rectangular puff pastry into 4 pieces. Place the quark in the middle of the pieces. Spread the quark with a spoon from the middle to the opposite sides (diagonally). Fold the two free corners into the middle and seal them with the egg white. Make streusel from the ingredients for the streusel and spread it on the pastries. Place the pastries on a baking sheet lined with baking paper and bake at 175°C (top/bottom heat) until golden yellow. I did this for about 20 to 30 minutes. Let the pastries cool slightly. Meanwhile, make the icing. Sift the icing sugar. 5 tablespoons or more as needed. Add milk or lemon juice to the icing sugar, but only a little at a time, as it’s easy to misjudge the amount and the icing will become too runny. So add just a sip at a time and mix well. The icing should just run off the spoon. Decorate the pastries with threads of icing.
