Lamb's lettuce with bacon and apple in honey-mustard dressing

Ingredients for 2 servings:

  • 1 bowl of lamb’s lettuce
  • 100 g bacon, diced
  • 1 m.-sized apple
  • 1 m.-sized onion(s)
  • 2 heaped tbsp seeds, e.g. pumpkin seeds, sunflower seeds, pine nuts. Also available as a mix.
  • 2 tbsp white wine vinegar
  • 3 tbsp water, or white wine
  • 1 tbsp olive oil or walnut oil
  • 6 tsp mustard, medium hot
  • 4 tsp honey
  • 1 tbsp dill tips
  • e.g. salt and pepper
  • 2 tbsp lemon juice

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

quickly prepared and very tasty

Wash the lamb’s lettuce and spin dry. Finely chop the onion. Add the bacon to the pan first; this takes the longest to cook. Fry briefly, then add the onions and seeds. Be careful, as pine nuts in particular can easily overbrown. Allow to cool slightly. Chop the apple into small pieces and add to the salad. Then add the bacon, onion, and seeds mixture. For the honey-mustard dressing, simply mix the vinegar, water, oil, mustard, honey, salt, pepper, and lemon juice well, then stir in the dill sprigs. Serve with a herb baguette or a buttered sandwich, for example.
