Crunchy muffins with currants

Ingredients for 1 servings:

  • 300 g muesli (spelt-oat muesli), crunchy
  • 150 ml oat milk (oat drink) or almond milk
  • 100 g spelt flour
  • 1 tsp cream of tartar baking powder
  • currants

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

very simple and vegan

Mix the muesli with the oat milk and let it soften slightly. Add the flour and baking powder and mix with a spoon, taking care not to completely crush the muesli pieces. Add the currants to taste and stir in. Divide the batter among 12 muffin cups and bake at 200°C (400°F) for about 15-20 minutes. Let cool after baking. Tip: These muffins also taste great with other fruits.
