Carrot stew with sour cream

Ingredients for 4 servings:

  • 6 carrots
  • 1 cup sour cream
  • 5 potatoes
  • 3 tbsp parsley (frozen)
  • 1 handful of ham, diced
  • 4 Mettwurst sausages (Mettenden)
  • 1 bratwurst, fresh
  • 1 ½ liters vegetable broth
  • 1 thick vegetable onion(s), diced

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Peel the carrots and potatoes and dice them. Then sauté the onions and ham. Add the broth and then the vegetables. Stir in the parsley and sour cream. Then slice the Mettenden sausages and add them. Cut the sausage meat lengthwise and form small balls from the meat mixture and add them to the pot. Cook everything until the vegetables are tender. I serve them with rolls or bread. This amount is enough for about a large pot (not a giant party pot).
