Quiche with sausage and vegetables

Ingredients for 4 servings:

  • 250 g flour
  • 125 g butter, cold
  • 1 egg(s)
  • 1 pinch of salt
  • 2 tbsp water
  • 1 kohlrabi
  • 1 zucchini
  • 2 carrots
  • 1 spring onion(s)
  • 1 onion(s)
  • 100 g ham
  • 100 g meat sausage
  • some oil
  • 4 eggs
  • 200 g sour cream
  • 100 g cheese, grated

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 25 minutes

Knead flour, butter, egg, salt, and 2 tablespoons of water into a dough. Roll out the dough with a rolling pin and place it in the 28 cm diameter baking pan. Press down to create a 3 cm edge. Then prick the dough several times with a fork, line it with baking paper, and weigh it down with dried pulses. Blind bake for about 12 minutes in a preheated oven at 180 °C (160 °C fan-assisted). For the filling, cut the ham, sausage, and vegetables into small cubes and then lightly fry them in a pan with oil over medium heat. Meanwhile, beat the eggs and stir in the sour cream and cheese. Season with salt and pepper. Spread the fried sausage and fried vegetables on the pre-baked dough. Then spread the egg, cheese, and sour cream mixture on top and bake the quiche for another 30 minutes.
