Flat peach and mint jam

Ingredients for 1 servings:

  • 6 flat peaches
  • 6 mint leaves
  • 322 g gelling sugar 1:1

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Cooking/baking time approx. 4 minutes; Total time approx. 1 day 19 minutes

Peel and pit the flat peaches, chop them, and weigh them. Finely chop the mint and place everything in a container suitable for a hand blender. Weigh the gelling sugar, equal in weight to the peaches. Add the gelling sugar to the container and blend everything thoroughly. Pour into a saucepan, bring to a boil, and then simmer for 4 minutes, stirring frequently. Pour the jam into clean, boiling-hot, rinsed jars and seal the jars. Let cool and enjoy.
