Ingredients for 4 servings:
- 200 g lamb’s lettuce
- 1 head of lettuce, curly, shredded
- 4 large mushrooms, sliced
- 1 avocado(s), peeled, cut into small pieces
- 1 bunch of spring onions, cut into fine rings
- 300 g raspberries, frozen or fresh
- 20 g lemon juice
- 20 g pine nuts
- 4 tbsp oil (walnut oil)
- 2 tbsp vinegar (raspberry vinegar)
- 1 tsp mustard, grainy
- tsp honey
- Salt
- pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Trim the lettuce and tear it into small pieces if necessary. Drizzle the chopped avocado with lemon juice and toss it with the lettuce along with the mushrooms and sliced spring onions. Whisk the vinegar, salt and pepper, honey, and mustard with the oil and pour over the salad. Toast the pine nuts and sprinkle them over the finished salad.
