Ingredients for 2 servings:
- 300 g beans (bush beans)
- 300 g beef, cooked, e.g. prime rib
- 2 tsp mustard
- 3 tbsp vinegar, good white wine vinegar
- 4 tbsp olive oil
- 4 tbsp broth (beef soup)
- 2 tsp capers, salted (e.g. from Pantelleria)
- 1 shallot(s)
- 2 tbsp parsley, chopped
- 1 egg yolk, boiled (to taste)
- ½ tsp savory, fresh (if available)

Italian-inspired bean salad
Prepare a salad dressing with vinegar, broth, herbs, a little salt (the capers are salty), pepper, and diced shallots. Add crushed egg yolk to taste. The salad dressing should have a sour, spicy flavor. Cook the green beans in very salty water until al dente, then rinse well. Slice the beef. Add the beans to the sauce and let it simmer to taste. Arrange the meat on a plate, add the beans, and pour some of the sauce over the meat. Alternatively, simply dice the meat and toss it into the sauce along with the beans. This is perfect for taking to work the next day. Serve with fried potatoes for a main course.
