Greek-style sausage salad

Ingredients for 4 servings:

  • 500 g meat sausage (e.g. Lyoner)
  • 2 onions
  • 1 large red bell pepper(s)
  • 1 large bell pepper(s), yellow
  • 3 gherkins
  • 1 handful of olives, mild, black or green, n. B.
  • 1 package of cheese (herd’s cheese)
  • Salt and pepper, black from the mill
  • some cucumber juice
  • 6 tbsp oil
  • 3 tbsp white wine vinegar
  • 1 small bunch of parsley
  • 1 stalk of basil
  • 3 stalks of thyme
  • 2 sprigs of oregano
  • 1 lemon(s)

Working time approx. 40 minutes; Rest time approx. 10 minutes; Total time approx. 50 minutes

Peel the skin off the Lyoner sausage and cut the sausage into strips. Peel and halve the onion, then also cut into thin strips and add to the sausage. Thinly slice the gherkins and add to the sausage. First remove the seeds from the peppers, then also cut the peppers into thin strips and add to the salad. Dice the feta cheese and set aside. Add the olives to the salad. Wash and pat the parsley dry, chop very finely and add to the salad. Make a dressing with the oil, vinegar and a little pickle juice, some salt, pepper, lemon juice and the herbs and mix into the salad. Season to taste. Finally, carefully fold in the feta cheese. Let it sit for a moment and then serve.
