Arugula salad with caramelized pears and Gorgonzola

Ingredients for 4 servings:

  • 300 g arugula
  • 5 tbsp balsamic vinegar
  • 200g Gorgonzola
  • 4 bulb(s)
  • salt and pepper
  • 2 tsp sugar
  • Pumpkin seed oil
  • Balsamic vinegar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and drain the arugula. Peel and quarter the pears. Caramelize the sugar in a pan, deglaze with the balsamic vinegar, and season with salt and pepper. Add more sugar to taste. Sauté the pears in the caramelized sugar for about 2 minutes, then turn. Cut the Gorgonzola into small pieces and arrange over the salad. Dress the arugula salad with pumpkin seed oil and balsamic vinegar, then arrange the pears on top.
