Quick whole-grain raisin bread

Ingredients for 1 servings:

  • 450 ml water, lukewarm
  • 1 pack of fresh yeast
  • 2 tsp salt
  • 2 tbsp vinegar, e.g. red wine or fruit vinegar
  • 1 tsp honey
  • 500 g flour (whole wheat flour)
  • 100 g sultanas
  • 50 g flaxseed, crushed

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

It’s quick, tastes delicious, wholesome – very healthy!

Mix lukewarm water with crumbled yeast (42 g, one packet), add salt, vinegar, and honey (5-10 g), and stir. Let stand for a few minutes until the yeast has dissolved, while you weigh and prepare the remaining ingredients. This recipe should normally work with an appropriately adjusted amount of dried yeast. Sift flour and mix with sultanas and flaxseed. Gradually add the yeast water and knead/stir well. Pour the liquid batter into a greased loaf pan/muffin tin and bake for 60 minutes at 200°C (400°F) top/bottom heat, or 50 minutes at 170°C (340°F) fan-assisted oven. Remove from the pan at the end and bake for another 10 minutes if necessary. It’s best to slice while still warm. Important: I didn’t forget to mention that the bread doesn’t have to rise! This recipe is a variation of BirgitM’s basic 3-Minute Bread recipe. I really like this combination, but you can experiment a lot, especially with the “special ingredients” like raisins and flaxseed.
