Ingredients for 1 servings:
- 1 thin cake base (sponge cake), homemade or purchased
- 8 sheets of gelatin
- 2 cans of tangerine(s)
- 600 ml natural yogurt
- 2 packets of vanilla sugar
- 2 tbsp sugar
- 6 sheets of gelatin
- 500 ml cream
- 100 g instant drink powder (orange)
- 3 packets of vanilla sugar
- 1 coffee powder or cocoa
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
Soak the gelatine, drain the mandarins, and reserve the juice. Reserve a few mandarins for decoration. Mix together the yogurt, vanilla sugar, sugar, and 125 ml of mandarin juice. Dissolve the squeezed gelatine, stir into the yogurt cream, and fold in the mandarins. Place a cake ring around the base, pour the yogurt cream on top, and chill the cake for 30 minutes. To make the snowballs, soak the gelatine, whip the cream with the soda powder and vanilla sugar until stiff, then stir in the squeezed and dissolved gelatine. Refrigerate the mixture until firm. Use an ice cream scoop to scoop out balls and place them on the yogurt cream. Garnish with the remaining mandarins and dust with coffee or cocoa powder.
