Warm tomato salad with fresh herbs and fried toast

Ingredients for 1 servings:

  • 3 slices of toast (sandwich)
  • 2 large tomatoes
  • 3 tbsp olive oil
  • 10 g butter
  • possibly garlic
  • 15 sprigs of parsley
  • 5 sprigs rosemary
  • 2 sprigs of thyme
  • possibly sage
  • some sea salt, freshly ground
  • some pepper, freshly ground
  • 1 shot of balsamic vinegar, white

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Dice the bread and tomatoes. Finely chop the herbs and garlic. Heat the olive oil and butter together in a pan. Then add the diced bread, rosemary, and thyme. Only add the garlic when the bread is already lightly browned so it doesn’t burn. When the bread is golden brown, add the tomato pieces. Deglaze with a dash of balsamic vinegar, add the herbs, and season with salt and pepper. It tastes best with fresh herbs from the garden. You can also use frozen herbs if you don’t have any fresh ones on hand. I like the “Italian herb blend” best.
