Gratinated pork fillet with lamb's lettuce

Ingredients for 4 servings:

  • 800 g pork fillet(s)
  • 150 g goat’s cheese
  • 100 g cream cheese, reduced fat
  • 150 g lamb’s lettuce
  • 1 onion(s), red
  • 1 handful of walnuts
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • salt and pepper
  • Thyme
  • possibly cocktail tomatoes

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Wash and trim the pork fillet. Cut into finger-thick pieces and fry in a non-stick pan without fat. Season with salt and pepper, then place on a baking sheet or in a casserole dish. Mix the goat cheese with the cream cheese and season with thyme. Spread the cheese mixture on the pork medallions and grill briefly in the oven. Wash and trim the lamb’s lettuce, slice the onion into rings, and add cherry tomatoes, if desired. Mix together a vinaigrette of olive oil, balsamic vinegar, Dijon mustard, pepper, and salt, and season the salad with it. Roughly chop the walnuts and add them to the salad. Serve both together.
