Baked Kaiserbraten

Ingredients for 4 servings:

  • 1 kg Kasseler (Kaiserbraten)
  • 1 liter white wine
  • 1 large onion(s), cut into rings
  • 2 bell peppers, red and green, diced
  • 1 stalk(s) leek, cut into rings
  • 200 g mushrooms, sliced
  • 1 tbsp butter
  • 2 tbsp flour
  • ½ tube(s) tomato paste
  • ½ cup tomato puree
  • 100 g Emmental cheese, grated
  • salt and pepper
  • Marjoram, dried
  • Basil, dried

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

Simmer the meat in white wine for about 45 minutes. Sauté the vegetables in the butter for about 10 minutes. Dust with flour. Add the tomato paste and tomato puree and mix everything well. Top up with about 1/2 liter of the cooking broth and simmer on low heat for another 10 minutes, stirring occasionally. Remove the meat from the pot and let stand in aluminum foil for 5 minutes. Then slice and place in a baking dish. Season the vegetables with salt, pepper, basil, and marjoram and spread the sauce evenly over the meat. Sprinkle with Emmental cheese and bake in the oven at 180°C for 20 minutes. French white bread goes very well with this.
