Apple muffins with almonds and white chocolate

Ingredients for 1 servings:

  • 60 ml milk
  • 45 g whole wheat flour
  • 80 g wheat flour type 405
  • 60 g butter
  • 1 large egg(s)
  • 1 packet of vanilla sugar
  • 45 g sugar
  • 50 g white chocolate
  • 250 g apples, preferably sour, e.g. Boskop
  • ¼ package baking powder
  • 100 g almonds, chopped
  • 1 packet of vanilla sugar
  • 40 g butter
  • 1 pinch of cinnamon
  • 50 g wheat flour type 405
  • 30 g sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

for 12 muffins, an autumnal composition

Peel the apples and cut into small cubes. Finely chop the chocolate and set aside. Next, prepare the batter. To do this, combine the butter, sugar, vanilla sugar, egg, flour, whole-wheat flour, milk, and baking powder. Then fold in the apples, almonds, and chocolate. Fill the batter into 12 muffin cups. For the crumb topping, knead the flour with the sugar, vanilla sugar, butter, and cinnamon and sprinkle over the muffins. Bake in a preheated oven at approximately 200 degrees Celsius (convection oven) for approximately 15 minutes and enjoy while still warm.
