Apple muffins with yogurt and almonds

Ingredients for 1 servings:

  • 1 pot of yogurt (natural), 150 g
  • 3 m.-sized eggs
  • 1 cup sugar
  • 2 cups flour
  • 1 cup almond(s), ground
  • 1 packet of vanilla sugar
  • 2 tsp cinnamon powder
  • 1 packet of baking powder
  • 1 cup rapeseed oil
  • 3 m.-large apple, sour, approx. 350 g
  • 1 dashes lemon juice

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Makes about 18 muffins.

Preheat oven to 180°C fan/convection oven. Line muffin tins with paper baking cups. Peel and finely chop the apples, and drizzle with lemon juice. Spoon the yogurt into the mixing bowl and rinse the bowl. Using the bowl, measure the sugar, flour, almonds, and oil. Add the eggs and sugar to the yogurt and beat until frothy. Add the flour, almonds, vanilla sugar, cinnamon, baking powder, and oil and mix well. Fold in the apple pieces. Fill the muffin tins with the mixture until they are full. Place the muffin tins on the middle rack of the oven. Reduce the oven temperature to 160°C and bake the muffins for about 25 minutes.
