Ingredients for 2 servings:
- 125 g basmati
- 400 g spinach, fresh
- 100 g feta cheese
- 2 tbsp oil (lemon olive oil)
- salt and pepper
- nutmeg
- 250 ml water

Heat 1 tablespoon of the lemon olive oil, add the rice, and lightly toast. Deglaze with water, season with salt, and cook until the rice is tender. Meanwhile, wash the spinach and sauté briefly (!) in 1 tablespoon of lemon olive oil, seasoning with salt, pepper, and nutmeg. Dice the feta cheese and mix it with the rice.
