Cheesecake with applesauce and butter crumble

Ingredients for 1 servings:

  • 375 g flour
  • 200 g sugar
  • 200 g butter, soft
  • 1 packet of vanilla sugar
  • 350 g applesauce
  • 500 g quark, 40% fat
  • 2 eggs
  • 1 packet of vanilla pudding powder
  • 125 g sugar
  • 150 g butter, liquid
  • 2 tbsp semolina
  • 2 tbsp lemon juice concentrate or juice of half a lemon

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

for a 26 or 28 cm springform pan

Make a crumble dough from flour, sugar, butter, and vanilla sugar. Line a 26cm or 28cm springform pan with baking paper and fill with about half of the butter crumbles, pressing them down. Ensure the edges are slightly raised. Spread the applesauce evenly over the crumbles and set the pan aside. For the quark filling: Separate the eggs. Beat the egg whites until stiff. Mix the quark with the egg yolks and the remaining ingredients. Fold in the beaten egg whites. Pour the finished quark mixture evenly into the springform pan and sprinkle with the remaining butter crumbles. Bake on the middle rack of an oven preheated to 200°C (top/bottom heat) or 175-180°C (fan oven) for approximately 50-60 minutes.
