Low-carb butter almond cookies

Ingredients for 1 servings:

  • 100 g butter, cold
  • 250 g almonds, blanched and ground
  • 2 egg yolks
  • n. B. Liquid sweetener
  • n. B. Bitter almond flavor, cinnamon and gingerbread flavor

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Combine all ingredients in a mixing bowl and knead well with your hands; the dough will be a bit sticky. Wrap the dough in cling film and flatten it so it cools faster. Let the dough rest in the refrigerator for 30 minutes. Form the dough into balls and flatten them. Line a baking sheet with baking paper and place the cookies on them. Preheat the oven and bake at 150°C (top and bottom heat) for 20 minutes. The cookies will still be a little soft after baking, but they will harden.
