Ingredients for 4 servings:

  • 2 tbsp Miracle Whip Balance
  • 2 tbsp sour cream or creme fraîche
  • 1 tsp mustard, hot
  • 2 tbsp cream
  • salt and pepper
  • 1 tsp sugar
  • 1 onion(s), diced
  • 1 can corn, drained
  • 1 can kidney beans, drained
  • 2 large tomatoes, roughly diced
  • ½ cucumber(s), peeled, cut into pieces
  • ½ head of iceberg lettuce, torn into bite-sized pieces
  • possibly mozzarella
  • possibly mushrooms, fresh
  • possibly sheep’s cheese
  • optional vegetables of your choice

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Total time approx. 35 minutes

without meat, tastes good with grilled food

Make a spicy dressing with Miracle Whip, sour cream (use a generous tablespoon), heavy cream, mustard, salt, pepper, and sugar. Stir in the diced onion. Then add the corn and kidney beans, tomatoes, and cucumbers. If you like, you can also add finely chopped mozzarella, feta cheese, fresh mushrooms, bell peppers, zucchini, etc. The sky’s the limit. Finally, add the iceberg lettuce, cut into bite-sized pieces. Let it marinate for a while and serve.
