Kohlrabi salad

Ingredients for 4 servings:

  • 600 g kohlrabi
  • 200 g tomatoes
  • 2 small onions
  • 2 pickles
  • 100 g yogurt
  • 20 g sunflower oil
  • salt and pepper
  • 1 pinch(s) of sugar
  • chives

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Coarsely grate the kohlrabi, peel the tomatoes and cut into pieces, along with the pickles and onions. Place them in a bowl. Make a marinade with yogurt and sunflower oil and season with salt, pepper, and sugar. Finely chop the chives and add them to the marinade. Pour these over the salad ingredients and stir. This salad can marinate for a while (about 30 minutes), but should be eaten as soon as possible, as the kohlrabi will be soft the next day.
