Ingredients for 4 servings:
- 250g mozzarella
- 1 bell pepper(s), red
- 1 bell pepper(s), yellow
- 1 bunch of basil
- 5 leaves of fresh mint (alternatively lemon balm)
- 1 ½ tbsp vinegar (white wine vinegar)
- Salt
- White pepper, freshly ground
- 3 tbsp olive oil
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Drain the mozzarella thoroughly and cut into small cubes. Wash the peppers, halve them, and remove the seeds and white membranes. Cut the halves into small cubes. Wash and finely chop the basil and mint. Mix all of these ingredients in a bowl. Mix the vinegar with salt and pepper, then gradually whisk in the oil. Add the marinade to the bowl and mix everything thoroughly. Serve the salad as soon as possible. TIP: This salad tastes especially good with the fine buffalo milk mozzarella.
