Halloumi & Paprika Couscous

Ingredients for 2 servings:

  • 150 g couscous
  • 290 g mixed pepper antipasti (jar)
  • 2 tbsp olive oil
  • 1 clove(s) garlic, chopped
  • 140 g mixed mushrooms, sliced
  • 140 g cheese (halloumi), diced
  • 15 g herbs (oregano, basil, parsley), chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Let the couscous stand in a covered bowl with 300 ml of boiling water for 5 minutes. Place the antipasti in a small saucepan and heat gently for 3-4 minutes. Heat 1 tablespoon of oil and fry the garlic. Add the mushrooms and fry for another 3-4 minutes until golden brown. Set aside. Meanwhile, heat the remaining oil and fry the halloumi for 2 minutes. Mix the antipasti and herbs with the couscous and season. Divide among plates and place the halloumi and mushrooms on top of the couscous.
