Gluten-free quark bunnies

Ingredients for 1 servings:

  • 250 g quark, lactose-free
  • 2 eggs
  • 80 g sugar
  • 2 tbsp vanilla sugar, homemade
  • some lemon zest, organic
  • 6 tbsp sunflower oil
  • 260 g flour, gluten-free from Schär (Mix C)
  • 1 pack of vanilla pudding powder, gluten-free
  • 1 packet of baking powder, gluten-free
  • some butter, liquid
  • Chocolate glaze
  • Sugar sprinkles, colorful

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Put the quark in a bowl, along with the eggs, sugar, vanilla sugar, lemon zest, and 12 tablespoons of sunflower oil, and whisk until smooth. Now add the flour, pudding powder, and baking powder, and knead everything with a dough hook until you have a smooth dough. Remove the dough from the bowl and knead well by hand again, adding more flour if necessary, until the dough is no longer sticky. Sprinkle some flour on the work surface and shape the dough into an oval about 2 cm thick. Then cut out bunnies or any desired shapes and place them on a baking sheet lined with baking paper. Before placing them in the oven preheated to 180 degrees Celsius, brush them with melted butter. Then bake in the oven for 15 minutes. Once cooled, decorate as desired with chocolate icing and some sugar pearls. It looks pretty and the children will love it. Put any leftover pastries in a freezer bag; they taste great the next day too.
