Ingredients for 2 servings:

  • 125 g grapes, red and green
  • 125 g mushrooms, fresh
  • 125 g chicken breast fillet(s)
  • 75 g cheese
  • ½ egg yolk
  • ¾ tsp mustard
  • ¾ tsp vinegar
  • 50 ml oil
  • 1 ½ tbsp natural yogurt
  • salt and pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 15 minutes

Cut the chicken into smaller pieces. Fry in a pan until crispy, then remove from the pan and set aside. Halve the fresh mushrooms and fry them as well. Remove from the pan and set them aside. Halve the grapes and cut the Gouda into small cubes. To make the mayonnaise, mix the egg yolk with mustard, vinegar, salt, pepper, and a pinch of sugar using a hand blender. Then very slowly add the oil until the desired consistency is reached. Finally, stir the yogurt into the mayonnaise with a tablespoon and season to taste. Mix the mushrooms, meat, grapes, and cheese with the homemade mayonnaise. Tip: Let the salad stand for half an hour so the flavors blend.
