Autumn salad with fruity apple dressing

Ingredients for 4 servings:

  • 100 g lamb’s lettuce
  • 100 g arugula
  • 100 g bacon, sliced
  • 200 g mushrooms
  • 200 g cheese (goat)
  • 3 tbsp olive oil
  • 1 tsp jelly (apple)
  • 2 tbsp Balsamic vinegar, white
  • salt and pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Trim, wash, and spin dry the lamb’s lettuce and arugula. Cut the bacon into bite-sized pieces and fry until crispy. Trim, slice, and fry the mushrooms. Dice the goat cheese (if you don’t like goat cheese, just use Gouda). Mix all the salad ingredients and arrange on plates. Mix together the olive oil, apple jelly, and balsamic vinegar and season with salt, pepper, and sugar. Drizzle the salad with the dressing. Tip: If you like, you can also halve some cherry tomatoes, briefly fry them, and mix them into the salad.
