Ingredients for 4 servings:

  • 2 large chicken breasts
  • some oil for frying
  • 150 g cheese (Gouda)
  • 150 g grapes, blue
  • 1 egg(s)
  • 100 ml oil
  • 2 tsp rice vinegar
  • 1 tsp mustard
  • salt and pepper
  • 3 tbsp yogurt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Season the chicken breasts with salt and pepper and fry in a pan in neutral oil until cooked through. Then let it cool and cut into bite-sized pieces. Transfer to a large bowl. Finely dice the cheese. Halve and deseed the grapes. Also add to the bowl. For the mayonnaise, put the egg, oil, vinegar, mustard, salt, and pepper in a tall mixing bowl and blend with an immersion blender until a thick mayonnaise forms. Now add 3 tablespoons of natural yogurt and blend briefly again to refine the mayonnaise (you can also omit the yogurt). Mix more or less mayonnaise with the ingredients in the bowl to taste. Serving tip: Halve the poppy seed rolls, top with marinated lettuce, and arrange the salad on top.
