Low-carb poppy seed quark cake

Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 150 g poppy seeds, ground
  • 3 eggs
  • 50 g protein powder, vanilla or chocolate flavor
  • 20 ml liquid sweetener
  • 2 tsp, leveled baking powder

First, preheat the oven to 180 degrees Celsius (convection oven). Beat the eggs until frothy, ideally using a mixer or food processor. Then stir in the quark thoroughly. Mix the egg white powder with the baking powder and stir into the quark mixture. Stir in the poppy seeds and sweetener and pour the batter into a small springform pan. If you prefer a flatter cake, you can simply use a larger springform pan. Bake the cake for about 45 minutes and then let it rest for a few hours to better develop the poppy seed flavor. Total cake: 1486 kcal. Per slice (1/8): 186 kcal.
