Crostini with fruity chutney and Camembert

Ingredients for 4 servings:

  • 200 g dried fruits, mixed, soft, finely diced
  • ½ tsp mustard seeds
  • 2 tbsp olive oil
  • 2 onions, diced
  • 1 small chili pepper(s), red, pitted, finely diced
  • 1 orange(s), untreated
  • 150 ml apple juice
  • Salt
  • pepper
  • 2 tbsp marmalade (orange)
  • 12 slice(s) baguette(s) (whole wheat)
  • 200 g Camembert(s), cut into 12 baguette-sized slices
  • n. B. Thyme, for decoration

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat oven to 200°C. Fry the mustard seeds in a pan in hot oil until they begin to pop. Add the diced onion and chili and sauté for 4 minutes. Finely grate 1 teaspoon of orange zest and squeeze out the juice. Add both to the onion mixture along with the dried fruit, apple juice, and orange marmalade. Simmer for 8 minutes. Season to taste and allow to cool. Toast the baguette slices on a rack under the grill for about 3 minutes until golden brown. Spread each slice with 1 tablespoon of chutney and top with a slice of Camembert. Grill for another 3 minutes until the cheese melts.
