Wafer – Lime Cake

Ingredients for 1 servings:

  • 8 sheets of gelatin
  • 500 g mascarpone
  • 500 g quark
  • 70 g sugar
  • 5 wafers (Karlsbad wafers), flavor as desired)
  • 800 g nectarine(s), alternatively 1 can peaches or apricots
  • 6 limes, juice

This is a very quick and delicious refrigerator cake to prepare. If using canned fruit, drain it well and use a little of the juice to soften the gelatin. Wash fresh fruit, remove the seeds, and cut it into thin wedges. Soak the gelatin. Squeeze the limes – if you like, you can also grate a little more zest and stir it into the cream and/or use it for decoration. Mix the mascarpone with the quark, sugar, and lime juice until smooth. Dissolve the gelatin according to the instructions and stir it into the mascarpone cream. Place a Carlsbad wafer on a cake plate and cover it with an adjustable cake ring. As soon as the cream begins to thicken, alternate layers of cream, fruit, and wafers. The final layer is cream. Reserve some fruit for decoration, decorate the top attractively, and let the cake set in the refrigerator, ideally overnight.
