easy and fast
Dissolve the yeast cube in lukewarm water and set aside. Combine both types of flour in a sufficiently large bowl and add the honey, quark, salt, and yeast solution. Knead the mixture into a smooth dough. I let the dough knead in the KitchenAid for around 10 minutes. Once the dough is kneaded, add the oats. Cover the dough with a kitchen towel and let it rise for half an hour at around 30 degrees Celsius, ideally in the oven with the light on. Knead the dough briefly again by hand and place it in a greased and floured baking dish or loaf pan. Cover the dough with a kitchen towel and let it rise for 30 minutes. Finally, make a slight indentation in the center of the dough and decorate with oats, if desired. I spray the dough with water, add the oats, and spray them again so they stick well. Bake the bread in a preheated oven at 200 degrees circulating air for about 25 – 30 minutes, depending on the desired degree of browning.
