Spicy cannelloni that everyone should enjoy

Very finely dice the red onion and bell pepper. Slice the spring onion into as small rings as possible. Peel the garlic. Preheat the oven to 200°C (top/bottom heat). Sauté the onions and spring onions, then press in the garlic. Fry the minced meat until almost cooked through. Add herbs to taste, mix well, and remove from the heat to cool. In a measuring jug, combine the passata with the cream, water, and spices. Season well with salt and pepper, but only add a little nutmeg. Add the oregano and stir thoroughly, preferably with a whisk, until completely blended. Now transfer the cooled meat mixture to a separate bowl and mix with the egg, grated Parmesan cheese, and polenta. Season with salt and pepper. Grease a dish with margarine or olive oil and cover the bottom with 2-3 tablespoons of the sauce. Fill the cannelloni with the meat mixture. This works best with a piping bag with a large nozzle, but you can also use a teaspoon. They should be completely filled. Then place the filled pasta in the baking dish (only in one layer!) and pour over the remaining sauce. Finally, tear the mozzarella with your hands and spread it evenly over the dish, then sprinkle with the Gouda cheese. Bake in the oven for about 35 minutes, until the cheese is golden brown. You can easily check whether the cannelloni are cooked through using a skewer.
