Radicchio with pear and Roquefort

Ingredients for 4 servings:

  • 1 radicchio
  • 150 g blue cheese (Roquefort)
  • 2 bulb(s)
  • 2 tsp sugar, for caramelizing
  • 100 g grapes, white and blue
  • 2 tbsp white wine vinegar
  • 2 tsp mustard
  • salt and pepper
  • 8 tbsp olive oil
  • 1 handful of walnuts

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the radicchio into strips, then place it in a large bowl and finely crumble the Roquefort over it. Core the pears, then cut them into wedges and then into approximately 2 cm pieces. Caramelize the sugar in a pan and toss the pear pieces in it. Wash the grapes, halve them, and add them to the salad bowl. For the marinade, mix the vinegar, oil, mustard, salt, and pepper well and pour over the salad. Add the caramelized pear pieces to the salad and toss everything well. Finally, scatter the walnuts over the salad and serve immediately.
