Lamb's lettuce with apple, mushrooms and avocado

Ingredients for 4 servings:

  • 100 g lamb’s lettuce
  • 1 apple
  • 100 g mushrooms
  • 1 avocado(s), ripe
  • 1 lemon(s), juice
  • 200 g Parmesan, broken into small pieces
  • 1 bunch of dill
  • 2 tbsp wine vinegar
  • 1 tsp mustard
  • Salt
  • pepper, black
  • 2 tbsp olive oil
  • 3 tbsp crème fraîche

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean and wash the lamb’s lettuce thoroughly. Peel and quarter the apple, remove the core, and cut into strips. Clean, wash, and slice the mushrooms. Halve the avocado, remove the pit, peel off the skin, and slice into strips. Drizzle the apple, mushrooms, and avocado with lemon juice. For the salad dressing, combine the vinegar and mustard, add salt, pepper, crème fraîche, and oil. Whisk until smooth. Arrange the salad ingredients attractively on a plate, scatter the Parmesan cheese over the top, and drizzle with the dressing. Sprinkle the salad with finely chopped dill. Serve with fresh baguette. 400 kcal per serving.
