Yogurt-coconut slices with walnut buttercream and peppermint chocolate icing

Ingredients for 1 servings:

  • 300 g sugar
  • 300 g flour
  • 200 g butter, soft
  • ½ pack of baking powder
  • 1 cup of yogurt
  • 4 eggs
  • 50 g desiccated coconut
  • 150 g butter, soft
  • 50 g powdered sugar
  • 200 g pudding (chocolate)
  • 1 handful of walnuts, crushed
  • ½ bar of chocolate (peppermint cream)
  • 1 shot of condensed milk or cream

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

Preheat the oven to 180°C (gas mark 3). Dough: Cream the sugar and butter until fluffy, then beat in the eggs one at a time. Mix the flour and baking powder and stir in alternately with the yogurt. Pour the very runny batter onto a baking sheet lined with baking paper and bake for approximately 20-25 minutes. Buttercream: Meanwhile, cream the softened butter with the icing sugar until fluffy, then beat in the chocolate pudding and stir in the chopped walnuts, then chill. Cut the cooled cake in half and spread the buttercream on one half. Cover with the other half. Heat the condensed milk and crumbled mint chocolate in a small saucepan, stirring constantly, until completely dissolved. The peppermint cream will also dissolve well. Once cooled, spread over the cake. Chill again thoroughly and cut into squares.
