Zucchini in cream sauce with turkey and rice

Ingredients for 1 servings:

  • 250 g rice
  • 200 ml vegetable stock
  • 300 g turkey meat, cut into strips
  • 2 zucchini, sliced
  • 2 tbsp herbs de Provence
  • salt and pepper
  • 1 pinch(s) of cayenne pepper
  • 50 g butter
  • 3 tbsp olive oil
  • 200 ml cream

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Wash the zucchini, trim the ends, and slice. Cook the rice in salted water for about 20 minutes. Cut the turkey into strips and sear in olive oil. Add the zucchini slices and fry. Pour in the vegetable stock and cook for 5 minutes. Stir in the cream and Provençal herbs and cook for another 5 minutes. Season to taste. Add the butter to the sauce shortly before serving and stir. Serve the rice and sauce on plates.
