Onion pancakes

Ingredients for 2 servings:

  • 2 onions
  • 1 ½ tbsp clarified butter
  • 4 eggs
  • 125 ml milk
  • 100 g cheese, grated
  • 50 g Parmesan, grated
  • 4 tbsp breadcrumbs
  • salt and pepper
  • 1 tsp marjoram, fresh or dried
  • 1 tomato(s)
  • 3 slices of Kasseler cold cuts
  • ½ bunch chives

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel and roughly dice the onions. Heat the clarified butter in a large pan and fry the onions for about 7 minutes, stirring occasionally, until light brown. Whisk the eggs with the milk, breadcrumbs, and cheese, and season with pepper, salt, and marjoram. Pour evenly over the onions and simmer gently for 10-15 minutes with the lid on until set. Dice the tomatoes and smoked pork. Add both to the flatbread and leave on the stove with the lid on for another 1-2 minutes. Sprinkle with chopped chives to serve. Tip: Also suitable for vegetarians without the smoked pork.
