Vanilla apple tart

Ingredients for 1 servings:

  • 200 g flour
  • 100 g butter, soft
  • 70 g sugar
  • 1 tbsp milk
  • 1 vanilla pudding powder
  • 150 ml milk
  • 100 g natural yogurt
  • 3 apples, e.g. Boskoop
  • 1 lemon(s), juice
  • ½ tsp cinnamon powder
  • 3 tbsp almond flakes
  • 2 tbsp apricot jam

For the pastry, first beat the butter with 50g of sugar until light and fluffy. Then add the flour and milk and knead into a dough using a dough hook. Let the dough rest. Mix the custard powder with 50ml of milk and the remaining 20g of sugar. Bring the remaining milk to a boil, remove from the heat, and add the mixed custard powder and the yogurt. Mix until smooth and creamy and let cool slightly. For the apples, first squeeze the lemon juice and mix it with the cinnamon in a large bowl. Peel and core the apples, and cut them into thin wedges. Immediately roll the apples in the lemon and cinnamon mixture and let them sit for a few minutes. In the meantime, line a tart tin with the dough and form a rim. Spread the custard over the pastry and place the apple slices on top. Whisk two teaspoons of the lemon and cinnamon mixture with the apricot jam and carefully spread it over the apple slices. Finally, decorate with the sliced ​​almonds. Preheat oven to 200°C (top/bottom heat) and bake for about 35 minutes, until the almonds are lightly browned. This vanilla apple tart tastes great warm—but it’s also delicious cold the next day.
