Ingredients for 2 servings:
- 500 g chicken breast fillet(s)
- 1 bunch of green asparagus
- 2 bell peppers, red
- 3 carrots
- some mushrooms, white
- 1 bunch of spring onions
- 5 garlic cloves
- 1 onion(s), white
- 1 onion(s), red
- 1 can coconut milk
- some oil for frying
- some salt and pepper
- Curry paste, red or sambal oelek
- a few stalks of basil
- bunch of parsley
- Herbs, Italian, e.g. oregano, rosemary, thyme as desired
- e.g. chili pepper(s), chopped
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Cut the chicken fillets into bite-sized pieces and marinate them in a bowl with sambal oelek. Meanwhile, clean the vegetables and cut them into chunks or cubes. Sear the meat in a wok with red curry paste, then add the onions and garlic. Gradually add the vegetables. Then add the coconut milk and simmer for about 10-15 minutes. Finally, add the fresh parsley and basil. Other seasonings are also welcome. A fresh baguette or basmati rice goes well with this dish.
