Rhubarb and Apple Pie

Ingredients for 1 servings:

  • 250 g rhubarb
  • 200 g apples
  • 60 g sugar
  • ½ pack of pudding powder
  • 2 tbsp apple juice
  • 260 g flour
  • 1 tsp baking powder
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 1 egg(s)
  • 130 g butter
  • Almond(s), sliced

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

This recipe is designed for a 26 cm diameter dish! Clean, peel, and dice the rhubarb and apples. Place in a bowl and mix with the sugar, custard powder, and juice. Preheat the oven to 180°C. For the crumble, put the flour, baking powder, sugar, vanilla sugar, salt, the egg, and the warmed butter in a second bowl and mix until crumbly. Grease the pie dish and press two-thirds of the crumble into it, covering the bottom and forming a rim about 1 cm high. Spoon the apple and rhubarb mix on top. Sprinkle the remaining crumble and flaked almonds on top. Bake the pie in the oven for about 45 minutes.
