Sweet and sour onion salad

Ingredients for 6 servings:

  • 450 g onion(s), peeled and cut into rings
  • 50 ml vinegar, wine vinegar or balsamic vinegar
  • 30 g sugar
  • 30 g tomato paste
  • 1 bay leaf
  • 65 g raisins
  • ½ bunch parsley, chopped
  • 300 ml water
  • Salt and pepper, to taste
  • 30 g olive oil

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Sauté the onions in olive oil. Add the tomato paste, sugar, raisins, bay leaf, parsley, water, and vinegar (or balsamic vinegar). Bring everything to a boil. Simmer uncovered for about 45 minutes, until the liquid has largely evaporated. Season to taste with salt and pepper. Serve with baguette or potatoes. A quick tip: serve the salad lukewarm or cold. Both taste great.
