Ralf's apple and carrot cream soup

Ingredients for 4 servings:

  • 3 large carrots
  • 2 apples (e.g. Elstar)
  • 200 g celeriac
  • 500 ml milk
  • 500 ml vegetable stock
  • 1 can coconut milk
  • 1 tsp curry powder
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel and dice the apples, carrots, and celery. Pour the milk into a saucepan and add the coconut milk. Cook the apple and diced vegetables until soft. Purée everything with a hand blender until thick and creamy. Add the vegetable stock until the desired consistency is reached. Stir in the curry powder. Bring to a boil again. Season to taste with salt, pepper, and nutmeg.
